Place the Yeast and water in a measuring jug Mix in 50ml of water Leave for 15 minutes whilst the mixture begins to froth | 2 |
Mix together the flour and a pinch of salt Make a well in the centre and mix in the yeast and water mix Add the olive oil. Add the remaining 200ml of warm water Mix into a smooth dough |

Place the dough on a floured surface and kneed for 5 minutes Return the dough to a bowl Leave for 15 minutes whilst dough begins to rise | 4 |
Place the dough on a floured surface and kneed for 2 minutes Roll the dough out to form pizza base - approx 6mm thick Place the base on an oiled baking tray |

Slice the mushrooms | 6 |
Place tomatoes - garlic - basil and olive oil in a pan Add salt and pepper to taste Simmer for 20 minutes or until sauce thickens |

Leave sauce to cool slightly in fridge | 8 |
Spread the sauce over base Sprinkle on the mushrooms Sprinkle over with Mozarella Cheese |

Bake in a Preheated oven for 25 minutes at 200 degrees C Remove and garnish with basil leaves | |
